Pumpkin & Carrot Soup
- for 4 portions
- 2 onions
- 1 chili pepper
- 1.5 kg pumpkin
- 3 carrots
- 4 tbsp. vegetable oil
- 1L vegetable broth
- 125 ml double cream
- Salt & pepper
- 1 sachet of OMNi-BiOTiC® Pro-Vi 5
Peel and finely chop the onions. Cut the chilli lengthwise, remove the seeds, wash and then cut into fine rings. Cut the pumpkin into wedges, peel, seed and cut into pieces. Peel, wash and roughly chop the carrots.
Heat the oil in a large pot. Sauté the diced onion, pumpkin, carrots and chilli, then add the broth simmer for 30 minutes. Blend until creamy. Mix the double cream with OMNi-BiOTiC® Pro-Vi 5 and stir into lukewarm soup. Season to taste with salt and pepper.
